Sweet and Creamy Date Truffles

Ok so the other day, I posted a yummy Cookie Dough Bar recipe that I happily devoured. Since I had some left over dates from making it and I didn’t feel like getting anything on my “to-do list” done, I decided to get creative with them. This recipe came from sheer boredom… thankfully they ended up being DELICIOUS! (Maybe now I can convince my Mom procrastination is a good thing? Or maybe not…) =P

Keep in mind that while dates are all-natural, they are still high in sugar. I would personally consider these more of an occasional healthy treat than an everyday indulgence. Because trust me… these could EASILY become an all-the-time-indulgence.. they are THAT good! They are clean despite the high natural sugar though so the “guilt” level is low ;) You won’t regret subbing these clean eating treats for the usual chemical-infused and highly-processed candy that many people treat themselves too!

Sweet & Creamy Date Truffles 

Ingredients: 

  • Organic Dates (Depends on how many servings you want, each date is 1 serving)
  • Natural Nut Butter of choice (I used Almond & Peanut for the ones pictured below)
  • Vanilla Whey Protein Powder
  • Baking Cocoa (optional)

Directions:

For each date, mix 1tsp nut butter + 1 tsp protein powder + 1/2 tsp baking cocoa + 1 tsp water in a separate bowl. Slice dates in half and discard date pit in trash can. Add a dollop of nut butter filling into each half of date. Set on a plate and freeze for at least an hour. Serve cold. ENJOY!
