Here is my favorite Chicken Fajita recipe! With the exception of the oil, I didn’t really measure anything beforehand, I just went by what looked right. I like a little mystery in life! =P
You will want to make adjustments depending on how many people you’re cooking for! I cooked the meat and veggies separately so I would be able to weigh out the right portion sizes afterward (I was only cooking for myself and this made about 2 servings)!
Chicken Fajitas
Ingredients:
- 6oz Boneless, Skinless Chicken Breast
- Olive Oil (2 TB)
- Onion (sliced lengthwise)
- Bell Peppers (sliced slender & lengthwise)
- Minced Garlic
Spices:
- TB Olive Oil
- tsp Lime Juice
- Pinch Sea Salt
- Cumin (to taste)
- tsp Chili Powder
- Chopped Cilantro (to taste)
- Jalapeño (to taste)
Directions:
Cut veggies and thinly slice chicken breast. Mix “Spice” ingredients in a bowl. Add chicken breast to spice bowl (make sure to coat chicken with the mixture). Marinate for 1 hour. Heat skillets and add oil, chicken & veggies (garlic went in both skillets). Flip & stir occasionally until chicken is finished cooking and veggies have softened. Serve with guacamole, salsa & greek yogurt (greek yogurt can be used like sour cream!) or serve on whole wheat tortillas. It’s also great on it’s own. ENJOY! =)
